Ingredients
  

Vegetables

  • 4 pieces potatoes
  • 4 pieces carrots
  • 2 pieces squash
  • 2 pieces plantains mashed or for cooking
  • 4 pieces tomatoes
  • ½ pieces onion
  • 1 pieces red bell pepper

Meats

  • 250 grams ham thick slices
  • 250 grams bacon thick slices, diced
  • 2 pieces Spanish chorizos sliced
  • 500 grams pork ribs tender

Cooking Essentials

  • 2 tablespoons vegetable oil
  • 500 grams lentils
  • water enough to cover the lentils

Cooking Steps

  • Dice the ham and bacon into small cubes.
  • Slice the chorizo into thin slices and set aside.
  • Blend the tomatoes, onion, and red bell pepper. Preheat a pan, heat the oil and sauté this mixture.
  • Once very hot, add the bacon, ham, and chorizo. Let it boil well and set aside.
  • In another pot, cook the lentils for 30 minutes, ensuring the water is double the height of the lentils until the water turns brown.
  • Meanwhile, chop the carrots, potatoes, and squash into small cubes or any preferred size.
  • When the lentils start boiling, add the pork and carrots and heat for an additional 15 minutes.
  • Add the sautéed mixture and heat for another 10 minutes.
  • After this time, add the potatoes and squash.
  • Allow to boil for 10 minutes, then add the plantains in thick slices (about 4 cm), boil for another 20 minutes and then turn off the heat.
  • Serve and accompany with tortillas.

Feel free to adjust the vegetable quantities to your preference and add spices as desired.
