Ingredients
  

Noodles and Beef

  • 8 oz lo mein noodles See notes
  • 1 lb lean ground beef like 90/10 or 93/7

Sauce Ingredients

  • ½ cup beef broth
  • cup low sodium soy sauce
  • ¼ cup brown sugar
  • 2 tablespoon hoisin sauce
  • 1 tablespoon cornstarch

Flavorings

  • 5 cloves minced garlic
  • 2 teaspoon minced ginger
  • ½ teaspoon black pepper
  • 1 tablespoon high-heat cooking oil like avocado oil
  • 3 green onions thinly sliced, whites and greens separated

Cooking Instructions

  • Boil the noodles according to package instructions, reducing cooking time by about 1-2 minutes. Drain noodles and set aside.
  • Preheat griddle or skillet to medium heat (around 400°F).
  • Prepare the sauce by combining beef broth, soy sauce, brown sugar, hoisin sauce, black pepper, and cornstarch in a bowl. Mix in 75% of ginger and garlic.
  • Cook ground beef in small chunks, allowing it to sear for 2-3 minutes. Add whites of green onions when beef is halfway cooked.
  • Add 1 tablespoon of oil to griddle or skillet, then add remaining minced garlic and ginger to toast briefly (about 1 minute).
  • Add drained noodles to the griddle or skillet and cook for 1-2 minutes, mixing briefly to incorporate garlic and ginger.
  • Add the cooked ground beef to the noodles and sauté together. Slowly pour in the prepared sauce.
  • Toss everything together, ensuring the sauce coats the noodles. Sauté for an additional 2-3 minutes until sauce thickens.
  • Sprinkle with the tops of green onions and serve immediately.

Notes

Noodle choice: use lo mein noodles, linguini, fettuccini, spaghetti, or udon noodles. For heat, add red pepper flakes or sriracha to the sauce. Add stir-fry vegetables for extra volume.
