Cucumber and Seasoning

  • ¾ cup English cucumber partially peeled
  • 1 teaspoon kosher salt divided
  • 4 to 5 cloves garlic peeled, finely grated or minced
  • 1 teaspoon white vinegar
  • 1 tablespoon Greek Extra Virgin Olive Oil Early Harvest
  • 2 cups plain Greek yogurt
  • Handful fresh dill or mint optional
  • ¼ teaspoon ground white pepper
  • Warm pita bread for serving
  • Sliced vegetables for serving

Instructions
 

Preparation

  • Grate the cucumbers with a box grater or food processor. Toss with ½ teaspoon kosher salt and squeeze dry using cheese cloth.
  • In a mixing bowl, combine garlic, remaining salt, vinegar, and olive oil. Mix well.
  • Add the grated cucumber to the garlic mixture. Stir in yogurt, pepper, and fresh herbs (if using).
  • Cover and refrigerate for 30 minutes to 2 hours to thicken and meld flavors.
  • Stir the tzatziki before serving and transfer to a serving bowl. Drizzle with olive oil if desired and serve with veggies or pita.

Notes

Drain cucumbers to avoid watery sauce. Best served after refrigeration.
