Ingredients
  

Chicken and Seasonings

  • 4 chicken breasts
  • 1 packet ranch seasoning mix
  • 2 tablespoon taco seasoning

Canned Goods

  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (8 oz) Rotel
  • 1 can (15 oz) corn not drained

Dairy

  • 1 block cream cheese

Fresh Ingredients

  • 2 fresh limes

Cooking Instructions

  • Add the chicken and place all the ingredients except the limes and the cream cheese in the crock pot.
  • Cover and cook on high in the slow cooker for 3-4 hours or low for 6-8 hours.
  • Shred the chicken.
  • Squeeze the limes over the chicken mixture, add cream cheese and stir to combine.
  • Continue to heat in the crock pot until the cream cheese is fully melted (usually 30-60 minutes).
  • Serve over rice or with tortillas. Enjoy!

Notes

Sometimes green chilis or bell peppers can be added. A can of diced tomatoes can be included for more tomato flavor. It’s good to let the mixture sit for 30 minutes to absorb any liquid. You can top with shredded cheese and avocados. Refrigerate leftovers in an airtight container for up to 5-7 days. A Fiesta Ranch Seasoning Packet can be used instead of the Ranch Mix and Taco Seasoning if available.
